Lightspeed and Green Earth Appeal have partnered to launch the first event for Carbon Free Dining, a ground-breaking initiative aimed at introducing a more sustainable model for UK restaurants. Under the program, Carbon Free Dining plants a tree on behalf of a restaurant for every bill they present. Lightspeed then gives their platform to any restaurant under the initiative, based o the number of trees that restaurant plants.
The initiative is already revolutionising the way local businesses and their customers give back to the environment in the fight against deforestation, extinction and global warming, having planted over 500,000 trees in more than 17 countries. It has received support from the likes of three-Michelin star celebrity chef Marco Pierre White, James Martin and Gregory Marchand, who have signed up their respective restaurants to Carbon Free Dining.
As part of the launch, partners Lightspeed & Green Earth Appeal hosted an event at the exclusive Haz restaurant Which included a panel discussion on the topic of ‘Creating the recipe for a more sustainable and profitable restaurant business’.
Moderated by CEO of Carbon Free Dining, Marvin Baker, the panel explored various ideas including:
- The expectations of the modern-day diner
- Creating an ethics-based community
- The best practices for independent businesses to achieve sustainability

Attendees learned about the impact of sustainability and how they can grow their brand reputation and sales through a more sustainable business model. The panel proved very insightful and discussed actionable tips that independent restaurants can take to better manage their carbon footprint and illustrate their corporate social responsibility which has become prominent in today’s dining experience.
Sustainability impacts restaurants across their entire value chain, from the types of food products they source, purchase and serve, to waste and packaging. By sourcing more local, organic and healthy ingredients, restaurants can reduce the social and environmental impact of running a restaurant whilst appealing to a new demographic of conscientious diners.
